Expect an unforgettable evening of fine dining, exceptional wines, and captivating storytelling in an enchanting lunar setting.

Join Vanya Cullen, Chief Winemaker and Managing Director of Cullen Wines, within our immersive To the Moon exhibition and be guided through an exquisite five-course dinner paired with highly acclaimed Cullen wines.

The experience 

This intimate evening is a truly unique experience. Hear from Vanya Cullen as she shares the fascinating journey behind her special selection of wines, some of which are exclusive to this event. 

Vanya will delve into the biodynamic methods and the Moon's rhythmic influence that played a crucial role in crafting these exceptional wines while you indulge in the meticulously designed menu to complement Cullen Wines'.

Set against the enchanting backdrop of the To the Moon exhibition, featuring Luke Jerram’s large-scale moon installation, the evening includes a tour led by curator and WA Museum Boola Bardip Manager, Helen Simondson, and captivating music by jazz pianist Darcy Maishman.

Cullen Wines, a premium boutique winery in Margaret River known for its biodynamic, carbon-neutral, and naturally powered practices, presents some of its exemplary wines, paired with an exquisite menu of dishes designed by Heyder & Shears Executive Chef Stephen Watson. Each pairing highlights the vibrant flavours and sustainable practices of Cullen Wines.

The Menu

Cullen Wines, a premium boutique winery in Margaret River known for its biodynamic, carbon-neutral, and naturally powered practices, presents some of its exemplary wines, paired with an exquisite menu of dishes designed by Heyder & Shears Executive Chef Stephen Watson. Each pairing highlights the vibrant flavours and sustainable practices of Cullen Wines.

Canapés 

  • Cured Kingfish, Cassava Cracker, Yuzu Avocado Puree 
  • Duck Croquette, Orange
  • Brewers Spent Grain Sourdough, Fresh Truffle Butter
  • Wine Pairing: 2023 Dancing in the Moonlight Rosé – A lively wine brimming with vibrant, juicy fruit flavours. Notes of strawberry, lemon sherbet, curry leaf, feijoa, and rose are complemented by fresh acidity and lingering texture. This wine is full of personality and fun.

On the Table

  • Beetroot, Local Goat Cheese, Mulberries, Karkalla, Hemp Seeds
  • Wine Pairing: 2023 Grace Madeline – A blend of Sauvignon Blanc and Semillon, this flagship blend from Cullen Estate, planted on their own roots in 1976, offers vibrant, clean acidity with flavours of dried pear, marigold, elderflower, and curry leaf. It has excellent balance and texture.

Entrée

  • Sandalwood Smoked Abrolhos Island Scallops, Onion Butter Sauce, Salmon Roe, Kohlrabi
  • Wine Pairing: 2023 Kevin John Chardonnay – Powerful, bold, and textural, this Chardonnay was harvested on fruit and flower days over three weeks, from a full Moon to a new moon flower day. It boasts fantastic fruit power and length, with a bouquet of white flower, orange blossom, peach, nectarine, vanilla, curry leaf, dried pear, and grapefruit, finishing firm and clean.

Main Course 

  • Dry Aged Beef, Miso Cauliflower, Pressed Beef Cheek, Baby Carrots, Jus
  • Wine Pairing: 2019 Legacy Malbec – Harvested from Mangan Vineyard on a biodynamic full fruit day, this Malbec is rich and balanced with a chocolate mousse texture and ripe tannins. Its soft, seductive palate offers phenolic tension, making it an artisanal masterpiece.

Dessert 

  • Bahen & Co Chocolate and Hazelnut Entrement, Mint Aero Chocolate, Rosella
  • Wine Pairing: 2022 Diana Madeline – A blend of Cabernet Sauvignon, Merlot, Cabernet Franc, and Malbec, hand-harvested over five biodynamic days. This wine features a juicy, rich structure with flavours of chocolate, mulberry, and cherry, complemented by fine-grained tannins.

About the Wines

Cullen Wines is a premium boutique winery in Margaret River, known for its commitment to biodynamic, carbon-neutral, and naturally powered practices. Each wine reflects exemplary viticulture and meticulous attention to detail in the winery.

The Cullen’s family association with wine in WA dates back to the 1880’s, when Kevin Cullen’s grandfather, Ephraim Mayo Clarke (1846 – 1921), purchased a small business and plot of land in Bunbury where he started a store and winery.

Stephen Watson, Executive Chef at Heyder & Shears, is a highly respected culinary expert with extensive experience in both restaurants and catering. Stephen is passionate about showcasing the exceptional quality and diverse flavours of Western Australian produce, prioritising local growers and sustainable practices. His culinary creations have graced prestigious events like the exclusive Gourmet Escape Beach BBQ and the elegant Shinju Matsuri.

Darcy Maishman, Jazz Pianist, is a seasoned musician with over half a decade of professional experience, known for versatility across genres from jazz to pop, and classical repertoire. Darcy has performed alongside renowned musicians such as John Patitucci, Tom Scott, Alan Broadbent, and many distinguished Perth alumni. These collaborations have profoundly influenced Darcy's musical style, infusing performances with a blend of technical mastery and expressive artistry.
